#1 Strawberry spinach salad
Ingredients:
A handful of baby spinach
1 cup sliced strawberries
¼ red onion, thinly sliced
2 tablespoons balsamic vinegar
½ tablespoon honey
1 tablespoon extra-virgin olive oil
Pinch of salt and ground black pepper
Steps:
Combine spinach, red onions and strawberries in a medium bowl. Set aside.
Stir the balsamic vinegar and honey in a small bowl. Slowly stream the olive oil into it and keep whisking until all the oil has been added.
Season with salt and pepper.
Drizzle the dressing over the salad and toss to combine.
Transfer to a plate and serve.
#2 Green salad with avocado, orange and red onion
Ingredients:
1 medium orange, segmented
1 tablespoon of fresh orange juice
½ small clove of garlic, finely chopped
½ tablespoon sherry vinegar
¼ teaspoon French mustard
Pinch of salt
1 tablespoon extra-virgin olive oil
¼ red onion, thinly sliced
1/4 romaine lettuce, chopped and washed
1 medium avocado, sliced
Steps:
In a small bowl, combine one tablespoon of the orange juice with garlic, mustard, and salt.
Add olive oil slowly in a thin stream to it. Continue whisking until all the oil has been added and the dressing is smooth.
Combine lettuce, orange segments, onion and avocado slices in a medium salad bowl. Drizzle the dressing over the salad and toss to combine.
Transfer to a plate and serve.
#3 Watermelon feta salad
Ingredients:
½ tablespoon extra-virgin olive oil
½ tablespoon red wine vinegar
Pinch of salt
2 cups of cubed seedless watermelon
1 cup of medium cucumber, chopped
A handful of crumbled feta
A small handful of chopped mint leaves
Steps:
Whisk together olive oil, red wine vinegar and salt in a small bowl.
In a medium bowl, combine watermelon, cucumber, feta, and mint. Pour over dressing, tossing to combine.
Garnish with more chopped mint leaves.
Transfer salad to a plate and serve.
#4 Smoked salmon & spinach salad
Ingredients:
A handful of baby spinach
5 cherry tomatoes, halved
½ cup sliced red onion
½ tablespoon extra-virgin olive oil
½ tablespoon fresh lemon juice
Pinch of salt & ground pepper
Steps:
In a small bowl, whisk together olive oil with the lemon juice and season with salt and pepper.
Add spinach, cherry tomatoes and red onion slices to the bowl. Toss well.
Transfer salad to a plate and serve.
